: In medium saucepan, melt butter; add chopped apple and cook 2 minutes, stirring constantly. Add rice and cook while stirring, for 1 minute.

: Add raisins and ½ cup (125 mL) apple juice; continue stirring for about 1 minute. Add the rest of the apple juice, cinnamon, salt and nutmeg; bring to a boil, stirring occasionally.

: Cover and cook 15-20 minutes or until rice is tender.

: Add sweetened condensed milk; mix well. Reduce heat to medium and continue stirring until smooth and warmed.

: Cool slightly (pudding thickens as it cools). Serve warm, sprinkled with additional cinnamon, if desired. Refrigerate leftovers.
