: In medium saucepan, combine water, rice, cinnamon and salt; let stand 30 minutes. Bring to a boil, stirring occasionally.

: Add Eagle Brand; mix well. Reduce heat to medium. Cook, uncovered, stirring frequently, 20-25 minutes or until liquid is absorbed to top of rice. While still warm, stir in raisins, if desired.

: Cool (pudding thickens as it cools).

: Serve warm or chilled and sprinkled with additional cinnamon, if desired. Refrigerate leftovers.
