Truffle Cheesecake

  • Makes: 8-10 portions  
  • Preparation Time: 15 minutes plus baking and chilling time 

Ingredients

1 1/2 cups375 ml chocolate or Oreo© cookie crumbs

1/3 cup75 ml butter, melted

3 pkgs250 g each cream cheese, softened

1 can300 ml Regular or Low Fat Eagle Brand® sweetened condensed milk

1 pkg225 g semi-sweet chocolate squares, melted

4 eggs

2 tsp10 ml vanilla extract

Directions

  1 :  Mix together cookie crumbs and butter. Press firmly onto bottom of 9" (23 cm) springform pan.

  2 :  In large mixer bowl, beat cream cheese until fluffy. Gradually beat in Eagle Brand until smooth. Add remaining ingredients; mix well.

  3 :  Pour into prepared pan.

  4 :  Bake 1 hour in preheated 325ºF (160ºC) oven, or until centre slightly jiggles when pan is lightly shaken. Cool. Chill. Just before serving, remove side of springform pan. Garnish as desired.
