: Preheat oven to 350ºF (180ºC). Line a 9" x 9" (2L) baking dish with parchment paper, overlapping 2 sides for easy removal.

: Combine coconut, sweetened condensed milk and vanilla in a medium bowl. Mix well. Press 2 cups (500mL) mixture into prepared pan. Reserve remaining 1 cup (250mL) mixture.

: Bake in preheated oven 15 minutes, until edges are lightly golden.

: While the crust bakes, whisk remaining sweetened condensed milk, lime juice and eggs in medium bowl. Pour over the hot crust. Sprinkle reserved crust mixture over filling. Return to oven for 18-20 minutes. Cool and cut into squares.
